Shrimp Bao

I gave this recipe a 5 for taste and 3 ease! The dough comes together pretty easily, as does the filling, but you do need a steamer setup to get it done.
Here are the ingredients you’ll need:
Dough
1 cup (227g) milk, warm*
1 heaping teaspoon instant yeast
3 cups (360g) all purpose flour
6 tablespoons (74g) granulated sugar
1/2 teaspoon salt
1 tablespoon vegetable oil, plus more for coating the bowl
1/2 teaspoon baking powder, optional
*Substitute unsweetened unflavored plant-based milk (or water) for dairy milk, if desired.
Glaze
3 scallions, finely chopped, green part only
1/2 teaspoon salt
1/4 teaspoon granulated sugar
1 tablespoon sesame oil
Lobster filling
three 1 1/2-pound lobsters, steamed*
5 scallions, coarsely chopped
1 to 3 teaspoons fresh ginger, grated; to taste
1 to 3 teaspoons garlic, minced; to taste
1 tablespoon toasted sesame oil
1 teaspoon soy sauce
1/2 teaspoon rice wine vinegar
1/8 teaspoon salt
*Or substitute 360g (a scant pound) of cooked lobster meat or shrimp.
