Chorizo-Stuffed Poblano Peppers

I give this recipe a 5 for tasty and easy. It’s creamy filling is so good, and it’s simple to swap out cheeses, peppers, proteins, and cooking methods!
Here are the ingredients you’ll need:
1 tablespoon (15ml) olive oil
1 small onion (7 ounces; 200g), minced
4 medium cloves garlic (20g), minced
2/3 pound (300g) raw Mexican chorizo, removed from casings
1 1/2 cups (260g) cooked white rice
2 medium roma tomatoes (220g), seeded and diced
1/3 cup (15g) finely chopped fresh cilantro
1/3 cup (75g) Mexican crema, or sour cream
1/4 cup (25g) grated Cotija cheese
Kosher salt
Freshly ground black pepper
4 large poblano peppers, halved lengthwise and seeded
1 cup (110g) shredded pepper jack cheese
